The genre is not exactly in its hey days now, and there are only about a handful of really good sims out there, if i'm not mistaken. I started with Lock On: Modern Air Combat. It's not exactly the best but it's a good starting point, i think. It's developed by Eagle Dynamics, which recently released Digital Combat Simulation: Black Shark, a critically acclaimed chopper sim.
It's as close as it gets to flying a real chopper, so be prepared for an excruciating amount of hard work and patience. It's an awesome game. But you do need some patience to play the game. Learning the game will take a while, and some missions will require you to fly for a few minutes without any action.
But you can set the destination to auto, and speed up the game temporarily. I had a stick while playing the game and it was an incredibly satisfying to shoot down planes. My stick broke after it's 6 year life.and I was left with mouse and keyboard. It was no fun after that. So, I suggest to get a stick. YES!!.You need the proper equipment for the job you want to do.

As the previous posters have said IL-2. Lock-on, DCS Blackshark are all good choices but not if you try and play with a gamepad. For example, I have a Saitek Pro Flight Joystick and throttle for all Air Combat sims.

I use a Saitek Pro Flight Yoke and throttle quadrant for my commercial flight sims such as Flightsim X. Even with these controllers having all their buttons programed I still have to use the Keyboard for certain commands as there is so much going on. Choose one that appeals to you, purchase the proper controller for it and practice!!.and have fun!!.Simulators are always better and more fun the just regular old games.:).
